Originally from Colorado, where she bartended at Denver’s The Corner Office, Carrie Allen moved to Portland in 2008. She was drawn to Urban Farmer for its country chic style and sustainable-minded menu. After four years at Urban Farmer, she still calls her professional teammates “ the best people in the world,” and always looks forward to creating handcrafted cocktails behind the steakhouse’s elegant bar. Of her Suspended Ginger cocktail, Allen notes, “I’m not much of a ‘whiskey girl’, so I wanted to create a sweeter drink that would appeal more to women. I love ginger, and maple syrup is such a classic source of sweetness.”
Suspended Ginger Cocktail
½ tbps freshly grated ginger
2 oz rye whiskey (Old Overholt Rye)
½ oz Tuaca
½ oz pure maple syrup
3 dashes Regan’s Orange Bitters
Combine all ingredients in a pint glass over ice and stir until chilled. Strain into a chilled martini glass; garnish with a fresh orange twist.
A native of Colorado, Zach McCabe has spent all but four years of his life in the state. He started bartending almost two years ago in Boulder and moved to Colorado Springs in the fall of 2011. His Old Scottsman was created to please both Scotch aficionados, who tend to like their whisky neat or on the rocks, and adventuresome non-Scotch drinkers willing to try something new.
“This is a drink based heavily on Scotch flavors,” notes McCabe. “The sweetness of the orange and honey, and the herbal and aromatic touch from the bitters, make it a good transition from the fruitiness of summer cocktails to cold weather flavors.”
2 orange slices
2 ½ oz Johnny Walker Red
½ oz honey clove simple syrup
Dash Angostura bitters
Dash Peychauds bitters
Muddle orange slices in a shaker glass; add whiskey, simple syrup, bitters, and fill with ice. Shake vigorously and strain into an old-fashioned glass filled with ice cubes. Garnish with an orange wedge and a Maraschino cherry.
