Ted Gallagher’s love for fermented and distilled beverages began during his time stocking shelves and delivering wine at Marty’s Liquors in Allston, Massachusetts. The “Never Setter” is a cocktail choice from Craigie’s extensive list that mingles sweet, sour, and peppery flavors in a refreshing libation.
1 1/2 oz Szechuan peppercorn-infused Plymouth Gin
1/2 oz Aperol
1/2 oz maple sugar simple syrup
1/2 oz fresh lemon
1/4 oz Cocchi Barolo Chinato
Dehydrated orange wheel presoaked in Peychaud’s Bitters until it has taken on the red color for garnish
Chill and prep a rocks glass with one large ice cube. Combine all ingredients in a shaker with ice, shake vigorously, and strain through a tea strainer over the ice cube and into the glass. Garnish with an orange wheel placed on top of the cube.
