House of Fire: The Newest Restaurant of Chef Jeff Tunks Opens in Arlington, Virginia

Fuego Cocina y Tequileria, literally meaning "fire kitchen and tequila bar," is the Passion Food Hospitality partners’ – Chef Jeff Tunks, Gus DiMillo, and David Wizenberg’s – newest restaurant venture, located in the vibrant Clarendon neighborhood of Arlington, Virginia. Just this month, Fuego opened its doors to welcome guests into a temple of traditional Mexican cuisine, serving authentic and robust flavors and textures.

Passion Food Hospitality’s unassuming chef and co-proprietor, Jeff Tunks, keeps his menus finely tuned at all seven restaurants with a dedicated chef at the helm of each kitchen. As a seasoned veteran with ten years’ experience with Passion Food under his belt, Mexico City native Alfredo Solis was handpicked to guide Fuego’s “Cocina” as chef de cuisine. Drawing naturally on his heritage, Solis has elevated dishes to meet the complexity and earthiness found in his home country using traditional methods that he learned in his formative years. Botanas, Mexican cold and hot plates to share include palate-pleasing dishes such as the Quesadilla de Jaiba enlivened with Lump Crabmeat and Trés Chiles Salsa, and Flautas de Pato with Shredded Duck Confit, Queso Oaxaca and Mole Negro. The dynamic menu is bolstered by daily specials and signature items like Carnitas with Slow Fried Pork prepared in a traditional copper pot and served with Homemade Corn Tortillas and Huachinango a la Veracruzana with Pan Seared Red Snapper. Unmatched house-specialty tacos feature variations such as Slow-cooked Beef Shortribs, Grilled Shrimp, and Yucatan-style Roasted Squash.  As an unfussy and sophisticated finale, Fuego offers classic Mexican desserts like Flan and Sopaipillas along with a few surprise twists such as the Fresh Lime & Coconut Tart with Candied Jalapeno and Toasted Coconut.

Split in two levels, Fuego provides a unique layout that exemplifies its spirited vibe. The lower level serves as the designated bar and lounge area with a 50-foot wrap-around bar framing ceiling-high shelves housing more than 120 world-class tequila labels and other fine spirits. Winding up the staircase past colorful custom murals, guests enter the lofty dining space equipped with striking rustic and modern décor set aglow by a bronze fireplace. Between white and caramel colored banquets, guests catch glimpses of the organized commotion that consumes the exposed kitchen.

With such spirited food, drinks and atmosphere, Fuego tempts diners to indulge in the boisterous fiesta of offerings deftly balanced in the exotic and familiar, the simple and complex.
