Le Royal at Royal Champagne Hotel & Spa Shakes up the Gourmet Scene in Champagne, France – Awarded its First Michelin Star Less Than Six Months After Opening

CHAMPAGNE, France (January, 24 2019) – Le Royal, the fine dining restaurant of Royal Champagne Hotel & Spa, has earned its first Michelin star, assuring the restaurant’s place among establishments offering diners the highest level of cuisine available in the world.

Under the direction of Chef Jean-Denis Rieubland, one of France’s most highly acclaimed chefs with two Michelin stars and a recipient of the coveted “Meilleur Ouvrier de France” (MOF) designation, Le Royal distinguishes itself by its playful take on contemporary fine dining.  Featuring locally-sourced French meats and poultry, organic vegetables grown in the region and honey harvested on the grounds, Chef Rieubland and his team including sommelier Daniel Pires and award-winning pastry chef Cédric Servela, have created a dining experience akin to the hotel itself – impeccable yet approachable.

“While it is imperative that the team bring classical French know-how to the kitchen, it is as important not to be confined by tradition,” says Chef Rieubland.  “Royal Champagne is located in a magical setting and I have challenged myself and the team to be as creative and unconstrained in our approach as the spirited wine that inspires all makers here.”

Examples from the Le Royal menu include a Turbot with seaweed butter, artichokes and baby carrots, solferino of seasonal vegetables and French parsley, a Veal sweetbread stuffed with chorizo, fricassee of girolles and caramelised pearl onions with Xérès jus, and sweet finish of Mandarin baba, creamy lemon sorbet vanilla whipped cream and champagne rosé.

Located 30 minutes from Charles de Gaulle Airport by train and less than two hours by car from Paris, Royal Champagne Hotel & Spa is built like a contemporary amphitheater, offering stunning views of the vineyards that stripe the hills of Épernay and the villages of Champillon and Hauvillers from each of its 49 rooms and suites.  Reimagining the wine-country retreat for all seasons, the Relais & Châteaux property is spread across a modernist wing, its original 19th-century Post House, and a 16,000 square-foot wellness center, with interiors created by noted designer, Sybille de Margerie.  The newly-renovated hotel embraces the lush bounty of the wineries and the UNESCO World Heritage Site that surround it, while bringing to the region its first world-class destination spa and chef-led gastronomic restaurant.
