The Romantic Sommelier

When I worked in fine dining in San Francisco as a Beverage Director and floor sommelier, we tended to view holidays such as Valentine’s Day and New Year’s Eve as “amateur hour.” When I worked in Manhattan, we would refer to this as “bridge and tunnel,” both implying the same thing – these were not our regular guests, they were here for a special occasion. They wouldn’t see our finest food and wine, only a set menu at a set price. They wouldn’t see our best service as they all wanted to come in at the same time, and for the same purpose. I tended to enjoy these special occasion nights though. My pairings were done. I only had to walk the floor and make sure everyone was happy and taken care of. I witnessed many romantic engagements, a memorable one being Elvis Costello and Diana Krall.
